Test the Maroilles melting heart
THE EXPERTISE OF THE DEFROIDMONT FAMILY HAS JUST ASSOCIATES WITH THE CREATIVITY OF CHRISTOPHE DOVERGNE, PROFESSOR OF COOKERY & GLOBE-TROTTER, TO PROPOSE A NEW PRODUCT WITH MAROILLES.
To mark the occasion on its 90th birthday, the company Defroidmont wanted to hit hard. For that, open house days were organized last week and in 2016, Patrick Defroidmont wanted to launch a new product every two months. Muffins with lardoons and Maroilles or with chorizo and Biloute Avesnoise have extended the Defroidmont reference list. And the innovations didn’t stop there as in the November catalogue is featured the Maroilles melting heart.
This product which, Guillaume Defroidmont, Manager of the production line, has been working on alongside with Christophe Dovergne since June.
An exclusive product
« We really wanted a melting heart. We wanted something light. », tells Patrick Defroidmont. To realize this, the entrepreneur called the talents of Christophe Dovergne, professor of cookery at Jessé de Forest lycée but also ambassador of the French gastronomy around the world. “He is someone who understands and respects products like the Maroilles. What makes him singular is that he has foreign cooking influences. The advantage is that he knows also the constraints of the food industry.” Christophe has immediately accepted the collaboration with the family business which “works by hand”. He knew that this way the proposed recipe would not be denatured. After a first attempt approved by the Defroidmont team, realized the traditional cooking way, Guillaume and Christophe continued their adjustments to adapt the production according to the quantity required by the company. « The most important for us was the taste, we adapted our equipment and we invested in manufacturing molds » details Guillaume. “The goal was to start the manufacturing for the end of the year”. And Christophe added « This melting heart is made with farm products. There are no additives. You won’t find on the box in the list of ingredients E160a, E170… »
This Wednesday, the first 700 melting hearts were produced by the production line. The first ones to profit of this new release are clients from the Sambre-Avesnois-Thiérarche region who order frozen food.
Picture comment: The lightness of the equipment which surrounds the melting Maroilles makes it an innovative product. For now, the distribution is only made by the Defroidmont Company. But within’ early 2017, the melting heart will be available in small and medium distribution center. In the future, Defroidmont could even adapt it with other cheese flavors. This is already the case with other references.
